Defined as products made from fresh or refrigerated fruits that have been processed. The fruit juice and fruit juice beverage category can also be subdivided into nine types: fruit juice, fruit puree, concentrated fruit puree, fruit pulp beverage, fruit juice beverage, fruit with pulp juice beverage, fruit concentrate syrup, and fruit beverage. Most of these products are made using a pureeing process to turn the edible portion of the fruit into a fermentable pulp or by adding an equivalent amount of water to the concentrated fruit puree to replace the natural moisture lost during the concentration process. These products have the color, flavor, and soluble solids content of the original fruit.
